Truly a Master’s Selection. For one, the discontinued Balvenie Founder’s Reserve 10 Year Old, created by the Balvenie Malt Master David Stuart is a fine dram from a marriage of The Balvenie single malt matured in Bourbon casks with that matured in Sherry casks.
For two, the 12 year old Balvenie DoubleWood over the period of maturation is transferred from a traditional oak whisky cask to a first fill European oak Sherry cask. The traditional casks soften and add character, whilst the Sherry wood brings depth and fullness of flavour.
And for three, matured in oak casks for 15 years, the Balvenie Single Cask 25 Year Old spent a further decade in Balvenie’s warehouses. Each cask formed a limited edition of up to 250 hand-numbered bottles.
During the 40ies the oak Sherry casks were in short supply as a result of the WW2, and The Macallan used to refill their casks more often than is the current practice; and since they were drying the barley with the use of peat, their whisky back then was less spicy and peatier than modern day Macallan. The Master Blender recreated that ole 40ies style by means of sampling bottles of those drams and matching their aroma and flavour with more recent distillations taken from the casks maturing in the warehouses.
